Two Product Lines - Start with Your Product Type

While machine dimensions such as working width and equipment models are important considerations, the first question that needs to be answered is: What type of biscuit do you produce?

Soft Dough Biscuits

Soft dough biscuits contain high levels of both fat and sugar. They are also dense because they do not develop gluten the same way that bread does. Therefore, they have a short texture and are formed using a rotary moulder that shapes the dough directly into its finished biscuit form before baking. Some examples of soft dough biscuits include cookies, cream-filled biscuits and short dough biscuits.

Hard Dough Biscuits

The hard dough contains a greater amount of water, as well as a lower fat quantity, allowing gluten to develop and create elasticity. This enables the dough to be laminated through a process of rolling and folding before being cut into shape with a rotary cutter. Some hard-dough product examples are Marie biscuits and Monaco crackers. Different machine specifications, oven settings, and conveyor configurations exist for both types of lines.

If you increase the working width to greater than 600 mm, you can produce more biscuits; however, the amount of floor space required increases, and the capital investment will increase proportionately.
